Bill Donovan – Partner

A native of Boston, Bill now splits his time between Saratoga Springs and Fort Lauderdale, Florida where his transportation related businesses are headquartered. An entrepreneur and bon vivant, Bill was always intrigued by the food and hospitality industry, so much so that he became a partner in Maestro’s At The Van Dam, one of Saratoga’s premier dining establishments. Further intrigued, along with Nicholas Adie, the two friends formed Donovan & Adie, Inc. to open Harvey’s Restaurant and Bar on Phila Street in Saratoga. Shortly thereafter, Adie became involved in Maestro’s and then Symphony Catering was established by the partnership. Having dined in over a thousand restaurants in over sixty countries, Donovan considers himself to be the “best guest ever.”

Nicholas Adie – Partner

In his early 20’s, Nick Adie decided upon a career in hospitality and he immediately immersed himself in the Saratoga restaurant scene by working in several noted restaurants, first as a server then as a bartender, advancing his career to eventually managing the food and beverage operations of the Saratoga Polo Association. In 2011, he returned to the restaurant side of the industry as Bar Manager at The Irish Times. Three years later, Nick joined with Bill Donovan and purchased the Irish Times, renaming it Harvey’s Restaurant & Bar. From there the partnership of Donovan & Adie, Inc. purchased the assets of Maestro’s at the Van Dam, eventually moving that restaurant to its new home at McGregor Links. Along the way, the duo established Symphony Catering. One of Nick’s true passions is exploring the fascinating world of wines.

Mike Pietrocola – Executive Chef

Mike Pietrocola became Executive Chef for Maestro’s at McGregor in March of 2016. With an impressive resume with extensive experience in managing and operating restaurants and catering services, Mike is widely acclaimed in the Capital Region for his culinary skills. Mike came to Maestro’s after serving eight years as Executive Chef at the Mohawk Country Club in Niskayuna, where he was instrumental in creating the renaissance that club has enjoyed. Previously he owned and operated the critically acclaimed restaurant, Park 54 in Clifton Park. Prior to that, Mike was Chef at The Clare restaurant in Schenectady, the name of which was changed to Pietrocola’s after he became sole owner.

Becky Harbour – Event Sales Coordinator

Becky has worked in all areas of the ala carte restaurant and in catering businesses where she served in banquet management both on and off-site. After ten years with Maestro’s, Becky took on the role of Events Sales Coordinator for the newly-formed Symphony Catering. Working side by side with Chef Mike Pietrocola, she is responsible for the overall planning and coordinating of events. Becky has developed a reputation as a true Eventeur! Her professionalism, knowledge and attention to details fuel her ambition to surpass the expectations of each guest. Becky loves spending time with her family, RJ, her daughter Lexi, and son Cody. She also enjoys exploring nature with her family’s two chocolate labs, Ranger and Hunter.

Crystal Rose OBriskie – Sous Chef

Her love and passion was caught hook line and sinker catering with her father, Chef OB’, as a little girl. As a student at New England Culinary Institute (NECI), she was awarded the first person and women to internship at a NFL Stadium while the Ravens brought home their 2001 Superbowl. Starting her career, she joined Abigail Kirsch’s team as a lead hors’ doerve chef catering from NJ, NYC, & up through the Hudson Valley for many years. Alumni to Hudson Valley Community College (HVCC), as well, Crystal used both her Early Childhood and Culinary degrees collaboratively while working with children with special needs using culinary therapies, at Devereux and throughout the capital district. Enjoying the capital district area Crystal catered with Mazzone and Fulton Montgomery Community College, and than in 2015 Crystal joined Symphony catering/ Maestros in Saratoga. Crystal has moved with Symphony catering/ Maestros to Maestro’s at McGregors golf course. Crystal loves spending time fishing, camping, and quality time with family and Fiancee Lloyd.

John Vallo – Maitre ‘D

John Vallo joins our staff in the newly created position of Maitre D’, after spending the past few years as Restaurant Manager at the highly rated Harraseeket Inn, Rockport, Maine. As Maitre D’, John will truly be the face of our restaurant and we’re confident his experience, skills and personality will ensure our guests enjoy their overall dining experiences.
